Harissa is a spicy chili-based spice blend and is quite hot. It finds wide usage in Moroccan, Algerian, and Tunisian cuisines.
It's served as a condiment in which pieces of grilled meat are dipped, added to soups and stews, or used as a seasoning for couscous. Typically, it's placed on the table alongside salt and pepper as a condiment.
Harissa is sometimes added to fresh tomato puree and served as a dip for finger foods. When mixed into plain yogurt, it becomes an excellent marinade for pork and chicken.
To make harissa paste, simply add olive oil or another type of oil, and optionally lemon juice, to the spice blend. Prepared this way, harissa can serve as a fantastic rub for pork, chicken, lamb, or mutton.
Recipes for harissa vary depending on the region and household. Variations can include cumin, red pepper, garlic, coriander, and lemon juice. In the Saharan region, harissa can have a smoky flavor.
Tunisia is the largest exporter of ready-made harissa, which can be found in powder form or already mixed with liquids in jars, cans, or tubes.
GOOD FOR meat, sauces, couscous, legumes.
