Piper borbonense
The word "Voa" means fruit/fruit, and "tsiperifery" in Malagasy means peppercorn vine.
Like cubeb, black pepper and long pepper, this is a real peppercorn, it grows in the rainforest and is handpicked by local villagers once a year. Fruits grow only on young shoots.
This peppercorn is considered a rarity among spices due to its extremely small crops.
FLAVOR
Its taste is fruity-resinous and peppery and lingers in the mouth for a long time. Its smell is very intense, fruity.
USED ARE unripe and ripe fruits.
PURCHASE AND STORAGE
Like black peppercorn, when ground, voatsiperifery quickly loses its aroma and flavor, so it is best to buy whole berries and grind them in a pepper mill or crush them in a mortar as needed. In a well-closed container, peppercorns can last more than a year.
USE IN COOKING
The aroma of this pepper does not tolerate heat well, so you should avoid boiling it for several hours, because in this way it will lose its fine aroma. We recommend that you put it in a pepper grinder and use it as needed at the end of cooking or when the dish is already on the plate.
Its mild spiciness goes well with chocolate-based desserts.
IT IS GOOD FOR tropical stews, fish dishes prepared with coconut and in combinations with lemon for salads and grilled fish.
