Speculatius Cookies Spice Blend
INGREDIENTS: cassia cinnamon, clove, cardamom, mace, ginger, allspice
ALLERGENS: nuts, celery and celery products, mustard and mustard products.
Recommendation for use: 500 g flour, 2 eggs, 125 g grinded almonds, 250 g sugar, 250 g butter, 5 g spekulatius spice blend, grinded orange zest from 1 orange, pinch of salt, 5 g of ammonium carbonate dissolved in one spoon of milk.
Mix all the ingredients together by hand or with a mixer and leave it in the fridge for 12 hours. Knead everything once more by hand and press into wooden molds or simply roll out thinly on a wooden cutting board and cut out the cookies with a thin glass, a knife or cookie forms.
Put the cookies on a baking tray with baking paper, brush with milk or egges, eventually sprinkle with chopped almonds and bake in a pre-heated oven on 200 °C for 12-15 minutes.
