Calendula officinalis
Marigold is an annual herbaceous plant from the daisy family (Asteraceae) originating from southern Europe, but due to the long history of cultivation it is difficult to specify its origin.
Marigold can grow up to 80 cm with sparsely branched flexible or upright stems. The leaves are oblong-lanceolate and hairy on both sides, and the edges are occasionally wavy or slightly toothed. Its flowers with ray petals are yellow.
Marigold is most often grown for decorative purposes, but it is also used in cosmetics and cooking.
The petals have a spicy and peppery taste with a touch of citrus. They can be used in the preparation of seafood dishes, pasta dough, baking and desserts. They give soups and salads a bright yellow, golden and orange color.
